“ I've only been here once & let me tell you right when you walk in the door the vibes are immaculate the owner & his son greeted us like he knew us for a long time & gave us samples. And I gotta say, given The Bay's SEVERE lack of good barbecue, this is good. Color was decent. A little burnt on some sides, but still good. Nice smoke ring. It was tender and the texture was what you'd expect. The smoke wasn't overpowering. That's what separates this from other spots around the area. The sides really shined. You walk in, and the owner greets with you a warm smile, witty sense of humor, and asks you what would you like? My husband and I weren't sure what to try so we picked what he recommend to us and he let us try some of the sides! He sold us on a two meat combo (Brisket/Pulled Pork), fried pickles, smoked potatoes, greens, and bbq beans! All of it was delicious-- 5 stars! “ Finally got to try them in their own brick n mortar. Looks like they took over a spot that could have been a taqueria at some point. Big menu board over the cashier area with about 5-6 tables. A guy with a legit southern drawl was chatting up another table. I'm assuming he was the/one of the owners. Overheard he was from Arkansas, which I'm sure has a bbq culture but not one that people NOT from the south are familiar with. Texas, St. Louis, Carolina, Memphis styles for some reason are the more well-known styles. Arkansas, Alabama, and Louisiana not so much. But guess what, they most certainly do bbq in those states, just doesn't get the buzz as the other areas. 2 Meat Combo ($43/4*) Okay the price did seem a bit concerning. But ya just gotta accept/know what meat prices are these days. And even though I am a bit worried sometimes commiting to prices like these because what if it is a letdown, then you're simply out of a decent chunk of money. Not like the old days (10 years+) where you'd only be out of $20 bucks or so. Now the portions were more than fair, it is a good amount of food. Like I ate about 3 meals from that box, albeit using my own sides from home after that first initial meal. So value wise, it isn't a rip, I'd easily return for future orders. The Breakdown: The Brisket (4*) When I first opened the box, this is what I first noticed and threw me off. Here they don't give you 'slices' of brisket, which is what most places do. Here their brisket is so cooked that it is literally crumbling upon a slice. So you get these large crumbles of brisket, which by default now is quite tender. There is a decent hint of smoke and a lot of beef flavor. Not salty at all, actually some of the most lightly seasoned bbq I've ever had. Now I did want to salt it at the table, but I withheld, as I really wanted to taste it as is. Now the magic happens when you add their sauce to the meat, a small dip is how I do it as I don't like saturated meats. And that sauce will eventually turn those bites into bbq that most are more accustomed to . I think I got a bigger dose of the leaner parts of the brisket, as the bites were really lean. I like fat in my brisket so I wouldn't mind more fat, maybe I'll ask next time if they have the point ends as an option. So this isn't that IG-able sliced brisket that gets all the attention, but I will say that it is a legit smoked meat, just done in an old school non-fussy country manner. The Ribs (4*) These had a heavier smoked bark, like almost black. It does give off drier vibes but that is their smoking style here. Now even a bit drier in texture, the meat is still tender and falls off the bone. I think by how they smoke, they may lose some juiciness, but their meat flavors get amplified cuz they are more concentrated from the longer cook. This also doesn't hit you with seasoning or a rub, but the second it touches that sauce, everything opens up, so then you get that harmony of smoke, tang, sweet and spicy. The Sauce (3.5*) I tried their medium and it has a good spicy kick. Definite flecks of peppers in there. I actually liked the flavor balance of sweet to tang and I feel is a good base. Definitely seems homemade and doesn't have that commercial bbq sauce taste. No liquid smoke in this, which is to be commended. But it is a bit too thick for me, but I've grown up to be from camp thin sauce, so it more absorbs into the meat versus clings on to the meat. But that is strictly a personal preference. Collard Greens (4*) Legit cooked down greens with a bit of meat in there and a lot of pot liquor, which is all the juice/liquid the greens simmer in. This is like you'd get from someone's farm kitchen down south. Could use a dash of salt n pepper, but that's an easy fix for me. Next time I'm gonna order a bigger container so I can have some with some dirty rice or cornbread. Trust. Potato Salad (3*) Very unique, never had anything like it. It was actually super simple, no chunks like onions or pickles. It almost seemed like chunks from a baked potato then tossed in a sweetish mayo like Miracle Whip, and that's it. And it is served warm, which is the bigger kicker, as I've never had warm potato salad from a bbq joint. I didn't love it, but I also didn't hate it. It actually went okay with counter bites with the rich smoked meats. I'm glad I finally got to try them as they are worthy to make my bbq rotation for my area. This isn't hipster bbq which I am actually more than fine with. This is deep south bbq from the country, and I can appreciate the traits that come with that.
